Solution
The good news is YES! You can update if you want and then there appears to be an option in Steam via the game's properties to roll back to the previous update.
Go to the Beta option on the left side, and then select the box that says None, and the drop-down has an option for 1_63_legacy_patch - 1.63 Legacy Version.
If anyone has found a way on other platforms such as GOG let us know below.
